Don’t you just love fall? Cozy sweaters, hot cups of cocoa, and all those amazing fall flavors (can you say pumpkin spice everything??). This is the perfect time of year to mix things up a little with your standard bring-from-home lunches – let’s get some more flavor going and spice thing up a bit!

We have found some tasty fall-inspired lunches that are sure to satisfy on even the shortest of lunch breaks. And better yet, we have linked them below.

7. Squash Lentil Stew

Now we know that foods like lentils and squash aren’t for everybody, but there is just something about this stew that works! It is so tasty, filling, and healthy! Even better yet, this recipe is actually a pressure cooker recipe so it only takes under an hour for a big pot of stew. This recipe makes 6 servings perfect for meal prep. 6. Sausage and Kale Frittata

Sausage and Kale Frittata screams fall, is super easy, and is chock-full of healthy and filling protein; no more getting hungry right after lunch! This recipe is a one-pan meal, makes plenty for multiple servings and can really be customized to whatever proteins or vegetables you have in the fridge any time of year. Bonus? 5. Roasted Fall Veggie Rice Bowls

Roasted Fall Veggie Rice Bowls are easy to make, filling, and make for a great vegetarian option. This recipe takes roasted seasoned fall veggies, mixes them with chickpeas for protein, and then lays everything over rice. Everything is topped off with a yummy vinaigrette. Yummy recipe found here.

4. Turkey, Apple & Cheddar Sandwich

There is no easier lunch than a sandwich. But this recipe gives you something to do with all those apples that are on sale this time of year. Best of all, you probably have many of these ingredients already in your pantry! Pair this sandwich with some veggies and dip or pretzels on the side, and this is a fabulous fall lunch. 3. Turkey Chili

Chili is very easy to throw together and this recipe even gives you the option of using your slow-cooker. The turkey makes it healthier, but chili is just one of those fall staples that is hard to pass up, especially for a filling lunch. 2. Black Bean, Veggie & Rice Salad

This lunch can be made in under thirty minutes and is filled with fall flavor! Many of these ingredients are already in your pantry, making it super simple to throw together – and you can easily double for more servings if needed. This is another recipe that is vegetarian-friendly! Yum!
